Matt Redpath, whose brewing resume includes stops at Gordon Biersch, Woodcock Brothers and Wandering Gypsy Brewing, has filed plans with the City of Buffalo to open his own spot, Sentient Brewing, at 38 Tremont Place.

Redpath will open the site along with his wife Kaitlin.

In addition to craft beers brewed on site, Sentient will offer a simple food menu served from a stationary food truck.

The self-described family-friendly space will feature a brew pub built into a 1,600-square-foot shed on the property, while the surrounding storage yard will be converted into an outdoor beer garden with green space and outdoor tables. The couple also wants to incorporate organic play elements into the space.

The couple is hoping to have Sentient Brewing open to the public by late summer / early fall of next year.

A public hearing is planned for the project Oct. 25.
