One-Eyed Cat Brewing Finds New Home in Williamsville
The years-long taproom search is finally over for One-Eyed Cat Brewing, who will set up shop next year on Main Street in Williamsville inside the former Pairings Wine Bar. The space offers approximately 2,000 square feet, though it needs to be adjusted for a taproom. For food, they have partnered with Pork Bellies BBQ to run the taproom’s kitchen. The brewhouse will start with a 2bbl system, with plans for eight fermenters. They also plan to open with a barrel aging program featuring 20 barrels, a combination of bourbon, tequila, gin and rum barrels. They hope to open by March.
