One-Eyed Cat Brewing is finally opening its doors, just in time for Memorial Day weekend. Located at 5893 Main Street in Williamsville, the brewery is owned by brewers Patrick Alexanderson and Brian Butler as well as Brandon Farrell, the owner of Buffalo Brew Fab.

The search for the right space took years, but it ended when the partners walked inside the former Parings Wine Bar.
According to Patrick Alexanderson, the space felt right from the very beginning because of its classy, yet funky vibe that is fitting for the One-Eyed Cat brand.

The newly renovated space now features a two-barrel system, a custom draft tower with 8 taps plus a dedicated stout tap, and custom furniture made by Buffalo Brew Fab. Inside, there’s bar seating, standard and high top tables, and a lounge area with a TV and fireplace. Outside, there’s a patio with a firepit. The location features 20 parking spaces, as well as street parking nearby.

The current tap list includes an ESB, a session West Coast IPA, a Belgian Blonde, an Imperial Stout, an Amber Ale, their award-winning Blueberry IPA, a NEIPA, and a Cream Ale. This list will rotate often, but you can always expect “beer flavored beer” from One-Eyed Cat Brewing. It is their motto after all.

One-Eyed Cat Brewing partnered with Pork Bellies BBQ to run the taproom’s kitchen. Owners Jay Woodworth and Ryan Walser specialize in Texas-style barbecue with lots of rub and spices. They have been operating a mobile trailer for pop-up events and competitions since 2019.

The food menu at the taproom will feature BBQ on Fridays and Saturdays including pork, brisket, smoked sausage, and chicken as well as homemade sides like corn salad, baked beans, and mac and cheese.

For the rest of the week, they will be focusing on small plates. The menu will cycle, so there will always be different offerings to try.

The Grand Opening for One-Eyed Cat Brewing featuring Pork Bellies BBQ is on Saturday, May 28 from 12 p.m. to midnight starting with a ribbon cutting by Mayor Deb Rogers at 11:45 a.m.
